Stephen,

Here is the link for that camera. I want to order is asap, we are leaving for the beach on July 9th so I'd like to have it for the trip. I wanted you to take a look though first, since we had talked about it.

Poppyseed Chicken

8-10 chicken breasts
1 pint sour cream (I use non or lowfat)
2 cans cream of chicken soup (I use 99% fat free)
3 sticks of butter
3 stacks of Ritz crackers (the tall package stacks in the box) You can actually get low fat Ritz now too
3 T poppyseeds

Cook the chicken in a big pot of water. I like to put lots of seasoning in the water so it infuses into the chicken - usually things like a bay leaf, some garlic and onion powder, poultry seasoning and definitely some salt- whatever sounds good to you. While that cooks, combine the sour cream and soup. In another bowl, melt the butter. Smash all the crackers (if you leave them in the package and just hit them pretty good with a rolling pin it works well - just be careful the package doesn't explode and you get cracker every where - not that this has ever happened to me or anything). Combine the melted butter, crackers, and poppyseeds. Once the chicken is cooked all the way through strain it and let it cool. (If you like the sauce to be a little thinner, you can save some of the cooking water to add to the soup mixture - start with 1/4 c and probably no more than 1/2 c though.) Then you can either shred it or cube it and add it to the soup/sour cream mixture. Taste the mixture - you'll probably want to add more seasoning. I put some more garlic and onion, salt to taste, cayenne pepper, poultry seasoning - whatever suits my fancy. In a 9X13 pan spread a layer of the crumb mixture (a little less than half), all the chicken with the sauce, and then top with the rest of the cracker stuff. Bake at 350 for 30-40 minutes (til heated through).

Moving In

We made it. It was a pretty long trip but we are almost done unpacking the truck. There are boxes everywhere but we'll make due. It will be nice to have all this finally done. Hopefully, we won't put off the unpacking for too long.

We left at 7:30 am on Friday and arrived in Sacramento at about 8:00 pm. With the help of my brother-in-law we loaded a piano into the truck. Sandi, my sister-in-law had dinner ready for us and it was delicious (I think in part because I so starving).

The next morning we loaded some things from Laura's parents and were back on the road at 10:30 am. We arrived at about 5:30 pm and check in with the apartment office and got our keys and the like. Unfortunately, we had not planned on leaving so early but needed to arrive before 6:00 pm so that we could sign our lease.

This meant that our arrangements with the Elder's Quorum didn't accurately reflect our arrival time. No one was planning to be at our apartment until 7:30 pm. I decided to get started anyway and ended up unloading from 6:00 pm - 8:30 pm. No one from the church showed up and Laura made me stop moving things because I was too tired. I wanted to keep working but also wanted to keep her from worrying about me.

Church is at 11:00 am and I still haven't found my dress shirts. I have to get going if I'm going to find those shirts in time for church.

Laura,

When you get settled in your new place would you post the chicken recipe you cooked for us? Personally, I'm always looking for new things to cook and good recipes.

Also, if anyone took pictures during the recent trip, I'd love to see them. It was fun seeing everyone. It really meant a lot to Stephen to have his brothers here for the blessing of his first child.

Upcoming Family Gathering

So, Stephen and I were talking, and we thought it would be a good idea to have a tentative schedule for the upcoming gathering of Anguiano personnel. Mostly we were wanting to put together a rotation for dinner. That way we all know whose house to meet at for the evening meal. This will allow for a little planning as a family and will lessen the number of times we eat out. :) This blog seems like a good forum to post this proposition and will allow for discussion on the topic. Also, anything we come up with is always available for revision and spontaneious change at any time; nothing is set in stone. If anyone has any activities they wanted to throw out for discussion, feel free. So, here is a starting point for a plan:
